Produced in the Tenuta Turriga in the countryside of Selegas, it is made from Cannonau, Carignano, Bovale Sardinian and Malvasia Nera grapes, vines that are born from a medium calcareous soil, a bit pebbly and stony with broken rock layers. After the manual harvest in the early hours of the morning, the grapes are carefully selected and subjected to fermentation at a controlled temperature (28-32 ° C). The wine macerates for about 16-18 days with délastage, before passing to aging in French oak barrels for about 18-24 months. Refines in bottle for the next 12-24 months.
TASTING NOTES
It has an intense ruby red color. On the nose, the bouquet is rich and complex, very varied. From blackberry to currant to a hint of coffee and slightly tobacco. Of great structure, balanced, fine and persistent, very high “souplesse” index. It is suggested to serve it at a temperature of 18-20 ° C.
RECOMMENDED COMBINATIONS
Game in general, specifically fur. Stewed wild boar, braised venison, spicy red meats, mature Sardinian pecorino. If you wanted a first course a red meat sauce is recommended, which is also very spicy.
