CABALE Cantina Bingiateris

Bingiateris (in sardo, vignaioli) “The wine of wines”, the Mandrolisai. An absolute excellence that until a few decades ago, throughout Sardinia, was considered the wine of Sunday, a red so special and so pleasant on the palate that it must be reserved for the days of the feast. The fame of that extraordinary wine, however, was becoming increasingly weak and the desire to return it to the glories of the past was the spring that gave way to everything. The Bingiateris winery was born in this way, from the desire of 7 men to renew their friendship and celebrate it with a glass of “their” Mandrolisai. What, in their memory, has always been “the wine of wines”.

In the cellar the grapes, after de-stemming, are sent to fermentation where they remain in contact with the skins for about ten days. After racking, the wine is decanted into steel containers to allow the malolactic fermentation cycle, to then be decanted into fine French oak barrels of 30 x 10 hl to facilitate subsequent aging for fifteen / eighteen months. The final refinement then takes place for a few months in the bottle.
